Ingredients

  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 1 1/2 cups all-purpose flour
  • 2 eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 splash of rum (optional)
  • Banana slices + glaze (for topping)

Instructions

  1. Mash ripe bananas in a bowl, then whisk in melted butter, brown sugar, eggs, vanilla, and optional rum.
  2. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and a pinch of salt.
  3. Fold dry ingredients into the banana mixture until just combined—do not overmix.
  4. Pour batter into a greased loaf pan and bake at 350°F (175°C) for 55–65 minutes until a toothpick comes out clean.
  5. While warm, drizzle with a simple glaze (powdered sugar + splash of milk or rum).
  6. Top with fresh banana slices.
  7. Let cool slightly before slicing for the perfect soft crumb.
