Ingredients
- Chuck roast
- Crushed tomatoes
- Red wine
- Mushrooms
- Onion & garlic
- Carrots & celery
- Italian seasoning or fresh thyme/rosemary
- Salt & pepper
- Olive oil
- Optional: tomato paste for richness
Instructions
- Pat roast dry, season heavily with salt and pepper, and sear all sides in olive oil until dark and caramelized.
- Add onions, garlic, carrots, celery, and mushrooms; sauté until softened.
- Stir in red wine to deglaze the pot, scraping up all browned bits.
- Add crushed tomatoes, Italian herbs, and optional tomato paste for depth.
- Nestle the roast back into the pot, cover, and braise at 300°F for 3–3½ hours until fork-tender.
- Remove roast and reduce sauce on the stovetop if thicker consistency is desired.
- Slice or shred the roast, spoon rich tomato-mushroom sauce over the top, and serve warm.
Notes
- For best results, use a good quality red wine.
- Allow the roast to rest before slicing for easier serving.
- This dish pairs well with crusty bread or polenta.
