Description

A deeply flavored, slow-braised Italian roast simmered in tomatoes, herbs, wine, and vegetables.


Ingredients

  • Chuck roast
  • Crushed tomatoes
  • Red wine
  • Mushrooms
  • Onion & garlic
  • Carrots & celery
  • Italian seasoning or fresh thyme/rosemary
  • Salt & pepper
  • Olive oil
  • Optional: tomato paste for richness

Instructions

  1. Pat roast dry, season heavily with salt and pepper, and sear all sides in olive oil until dark and caramelized.
  2. Add onions, garlic, carrots, celery, and mushrooms; sauté until softened.
  3. Stir in red wine to deglaze the pot, scraping up all browned bits.
  4. Add crushed tomatoes, Italian herbs, and optional tomato paste for depth.
  5. Nestle the roast back into the pot, cover, and braise at 300°F for 3–3½ hours until fork-tender.
  6. Remove roast and reduce sauce on the stovetop if thicker consistency is desired.
  7. Slice or shred the roast, spoon rich tomato-mushroom sauce over the top, and serve warm.

Notes

  • For best results, use a good quality red wine.
  • Allow the roast to rest before slicing for easier serving.
