Ingredients

  • Chicken legs or drumsticks
  • Paprika (preferably smoked)
  • Lemon juice
  • Garlic
  • Olive oil
  • Oregano
  • Salt & pepper
  • Chili flakes or peri-peri seasoning
  • Optional: fresh parsley for garnish

Instructions

  1. Mix lemon juice, olive oil, garlic, paprika, oregano, chili flakes, salt, and pepper into a thick marinade.
  2. Coat chicken pieces thoroughly and marinate at least 30 minutes (overnight for best flavor).
  3. Arrange chicken on a parchment-lined tray, skin-side up.
  4. Bake at 400°F for 40–50 minutes until deeply browned and crisp, basting once halfway.
  5. If extra crispness is desired, broil 1–2 minutes at the end.
  6. Rest chicken 5 minutes so juices settle.
  7. Garnish with parsley and serve with rice, potatoes, or crusty bread.
