Ingredients

  • 1 1/2 cups almond flour
  • 1 3/4 cups powdered sugar
  • 4 large egg whites
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp freeze-dried cherry powder or cherry preserves
  • 1/2 cup butter (for filling)
  • 1/4 cup heavy cream
  • Gel food coloring (light pink, optional)
  • Extra powdered sugar (for snowflake dusting)

Instructions

  1. Sift almond flour and powdered sugar together until very fine.
  2. Whip egg whites, gradually adding sugar, until stiff glossy peaks form.
  3. Gently fold dry ingredients into meringue until smooth and lava-like.
  4. Pipe small rounds onto lined baking sheets; tap to release air bubbles.
  5. Rest shells 20–30 minutes until dry to the touch.
  6. Bake 14–16 minutes; cool completely.
  7. Fill with cherry-vanilla buttercream, sandwich, and dust lightly with powdered sugar.
