- 2 large chicken breasts, butterflied and pounded thin
- 1 cup fresh spinach, sautéed
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- Salt and pepper to taste
- Marinara sauce for serving
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
- In a bowl, mix spinach, mozzarella, and Parmesan together.
- Lay out chicken breasts, season lightly, and spoon the spinach mixture over each.
- Roll tightly, secure with toothpicks, and brush with olive oil.
- Sprinkle with Italian seasoning, garlic powder, salt, and pepper.
- Bake 25–30 minutes until golden and the internal temp reaches 165°F (74°C).
- Serve over warm marinara sauce and garnish with parsley.
