Description

Juicy chicken breasts filled with creamy spinach and cheese, rolled, crusted with herbs, and baked to golden perfection.


Ingredients

Scale
  • 2 large chicken breasts, butterflied and pounded thin
  • 1 cup fresh spinach, sautéed
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Marinara sauce for serving
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a bowl, mix spinach, mozzarella, and Parmesan together.
  3. Lay out chicken breasts, season lightly, and spoon the spinach mixture over each.
  4. Roll tightly, secure with toothpicks, and brush with olive oil.
  5. Sprinkle with Italian seasoning, garlic powder, salt, and pepper.
  6. Bake 25–30 minutes until golden and the internal temp reaches 165°F (74°C).
  7. Serve over warm marinara sauce and garnish with parsley.
