A bright, herby Mediterranean marinade that makes chicken incredibly juicy and grill-ready.
Ingredients

- 1/2 cup Olive oil
- 1/4 cup Fresh lemon juice
- 4 cloves Garlic, minced
- 2 tsp Dried oregano
- 1/4 cup Red wine vinegar
- 1 tbsp Dijon mustard
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 tsp Dried thyme or parsley
- 1/4 tsp Red pepper flakes (optional)
Instructions
- Whisk olive oil, lemon juice, and red wine vinegar in a bowl.
- Add minced garlic, oregano, thyme, salt, and pepper.
- Stir in Dijon mustard until fully emulsified.
- Taste and adjust acidity or salt as needed.
- Add chicken and toss to coat completely.
- Cover and marinate at least 30 minutes (overnight for best flavor).
- Grill, pan-sear, or roast until juicy and lightly charred.

- For best flavor, marinate overnight.
- Adjust the amount of red pepper flakes based on your spice preference.
