- 2 Carrots
- 2 Potatoes
- 1 can Diced tomatoes
- 1 cup Green beans
- 1 Onion
- 2 cloves Garlic
- 1 cup Corn
- 1 cup Peas
- 2 stalks Celery
- 4 cups Vegetable broth
- 2 tbsp Olive oil
- 1 tsp Italian seasoning
- 1 Bay leaf
- Salt & black pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté onion, garlic, carrots, and celery in olive oil until softened.
- Stir in diced tomatoes, potatoes, green beans, and vegetable broth.
- Add bay leaf, Italian seasoning, salt, and pepper; bring to a gentle boil.
- Reduce to simmer and cook 20–25 minutes until vegetables are tender.
- Add corn and peas; simmer 5 more minutes.
- Remove bay leaf, adjust seasoning, and finish with fresh parsley before serving.
Notes
- This soup can be customized with any seasonal vegetables you have on hand.
- For a heartier version, add cooked beans or lentils.
