Ingredients

Scale
  • 2 Carrots
  • 2 Potatoes
  • 1 can Diced tomatoes
  • 1 cup Green beans
  • 1 Onion
  • 2 cloves Garlic
  • 1 cup Corn
  • 1 cup Peas
  • 2 stalks Celery
  • 4 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Italian seasoning
  • 1 Bay leaf
  • Salt & black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté onion, garlic, carrots, and celery in olive oil until softened.
  2. Stir in diced tomatoes, potatoes, green beans, and vegetable broth.
  3. Add bay leaf, Italian seasoning, salt, and pepper; bring to a gentle boil.
  4. Reduce to simmer and cook 20–25 minutes until vegetables are tender.
  5. Add corn and peas; simmer 5 more minutes.
  6. Remove bay leaf, adjust seasoning, and finish with fresh parsley before serving.

Notes

  • This soup can be customized with any seasonal vegetables you have on hand.
  • For a heartier version, add cooked beans or lentils.
