Description

Ingredients

  • 1 lb ground beef (or beef stew chunks)
  • 2 cups elbow macaroni
  • 2 cups tomato sauce
  • 1 tbsp sweet paprika
  • 1 small onion, diced
  • 1 cup beef broth
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup sour cream (for topping)
  • Fresh parsley, chopped

Instructions

  1. In a large pot, brown the beef over medium heat until fully cooked; drain excess fat.
  2. Add onion, bell pepper, and garlic; sauté until softened and fragrant.
  3. Stir in paprika, Italian seasoning, salt, and pepper to bloom the spices.
  4. Add tomato sauce and beef broth; simmer 10–15 minutes to deepen flavor.
  5. Stir in uncooked macaroni, cover, and simmer until pasta is tender, about 12–15 minutes. Add a splash of broth if needed.
  6. Spoon into bowls and top with a generous dollop of sour cream.
  7. Finish with chopped parsley and serve hot.

  • For a spicier version, add red pepper flakes.
