- 1 lb ground beef (or beef stew chunks)
- 2 cups elbow macaroni
- 2 cups tomato sauce
- 1 tbsp sweet paprika
- 1 small onion, diced
- 1 cup beef broth
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- ½ cup sour cream (for topping)
- Fresh parsley, chopped
Instructions
- In a large pot, brown the beef over medium heat until fully cooked; drain excess fat.
- Add onion, bell pepper, and garlic; sauté until softened and fragrant.
- Stir in paprika, Italian seasoning, salt, and pepper to bloom the spices.
- Add tomato sauce and beef broth; simmer 10–15 minutes to deepen flavor.
- Stir in uncooked macaroni, cover, and simmer until pasta is tender, about 12–15 minutes. Add a splash of broth if needed.
- Spoon into bowls and top with a generous dollop of sour cream.
- Finish with chopped parsley and serve hot.
Notes
- For a spicier version, add red pepper flakes.
- Can substitute ground turkey for a leaner option.
- Leftovers can be stored in the refrigerator for up to 3 days.
