Ingredients

  • 1 lb Ground lamb
  • 4 oz Feta cheese
  • 8 Corn or gluten-free tortillas
  • 2 cups Green cabbage (shredded)
  • 1/2 cup Greek yogurt or cream cheese (for whipping feta)
  • 1 Red onion (thinly sliced, pickled if desired)
  • 2 cloves Garlic, minced
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Oregano
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • Salt & black pepper to taste
  • Fresh herbs (mint or parsley) for garnish

Instructions

  1. Brown ground lamb in olive oil over medium-high heat until cooked and slightly crispy.
  2. Add garlic, cumin, smoked paprika, oregano, salt, and pepper; cook until fragrant.
  3. Blend feta with yogurt or cream cheese and lemon juice until smooth and fluffy.
  4. Warm tortillas until soft and pliable.
  5. Spread whipped feta onto tortillas.
  6. Top with spiced lamb, shredded cabbage, and pickled red onions.
  7. Finish with fresh herbs and serve immediately.

Notes

  • For a spicier kick, add chopped jalapeños to the tacos.
  • Feel free to substitute ground lamb with ground beef or turkey if preferred.
  • Pickling the red onions enhances their flavor and adds a nice tang.
