- 1 lb boneless chicken thighs
- 1 cup Greek yogurt (for marinade & sauce)
- 2 cloves garlic, minced
- 1 large cucumber, grated
- 4 pita breads
- 1 tbsp olive oil
- 1 tsp oregano
- ½ tsp smoked paprika
- ½ lemon, juiced
- ½ cup diced tomatoes
- ½ cup chopped lettuce
- Salt & pepper to taste
Instructions
- Combine yogurt, garlic, olive oil, lemon juice, oregano, paprika, salt, and pepper to make the chicken marinade.
- Coat chicken in marinade and chill for 20–30 minutes.
- Grill chicken on medium-high heat until charred and cooked through, about 5–6 minutes per side.
- For tzatziki: mix Greek yogurt, grated cucumber (squeezed dry), garlic, lemon juice, salt, and pepper.
- Warm pita breads on the grill or pan for 30 seconds per side.
- Assemble gyros with lettuce, tomatoes, grilled chicken, and a generous spoon of tzatziki.
- Sprinkle fresh parsley or dill on top and serve immediately.
Notes
- For extra flavor, marinate the chicken overnight.
- Feel free to add other toppings like red onion or feta cheese.
- Store leftover tzatziki in the refrigerator for up to 3 days.
