Ingredients

  • Large sweet yellow onions
  • Ground beef
  • Long-grain rice
  • Feta cheese
  • Garlic
  • Olive oil
  • Canned tomatoes
  • Beef or vegetable broth
  • Fresh parsley
  • Fresh mint
  • Fresh dill (or dried)
  • Dried oregano
  • Ground allspice
  • Ground cinnamon
  • Lemon juice
  • Salt & black pepper

Instructions

  1. Trim and peel onions, slice tops, and gently boil until layers soften; separate carefully.
  2. Sauté garlic in olive oil, add ground beef, and cook until browned.
  3. Stir in rice, tomatoes, herbs, spices, lemon juice, salt, and pepper; cook briefly.
  4. Fold in crumbled feta and chopped herbs.
  5. Stuff onion layers and nestle into a baking dish.
  6. Pour broth around onions, drizzle with olive oil, cover, and bake for 60 minutes; uncover and bake for an additional 20–25 minutes until caramelized.
