Description

Juicy golden chicken meatballs bursting with herbs, served over bright lemon orzo.


Ingredients

Scale
  • 1 lb Ground chicken
  • 1/4 cup Fresh parsley, chopped
  • 1/4 cup Fresh oregano, chopped
  • Zest and juice of 1 Lemon
  • 1 cup Orzo pasta
  • 2 cloves Garlic, minced
  • 1 Red onion, finely diced
  • 1 Egg
  • 1/2 cup Breadcrumbs
  • 2 tbsp Olive oil
  • Salt & black pepper to taste
  • 1/2 cup Feta cheese, crumbled
  • 2 cups Chicken broth

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet.
  2. In a large bowl, mix ground chicken, parsley, oregano, garlic, onion, egg, breadcrumbs, lemon zest, salt, and pepper.
  3. Roll the mixture into meatballs and place them on the prepared baking sheet. Drizzle lightly with olive oil.
  4. Bake for 18–22 minutes until golden and cooked through.
  5. Meanwhile, cook orzo in salted water or chicken broth until tender; drain.
  6. Toss the cooked orzo with olive oil, lemon juice, chopped parsley, and crumbled feta.
  7. Serve the meatballs over the lemon orzo and garnish with extra herbs and lemon wedges.

Notes

  • For added flavor, consider using homemade breadcrumbs.
  • Adjust the amount of lemon juice based on your taste preference.
  • These meatballs can be made ahead and frozen for later use.
