Juicy golden chicken meatballs bursting with herbs, served over bright lemon orzo.
Ingredients

- 1 lb Ground chicken
- 1/4 cup Fresh parsley, chopped
- 1/4 cup Fresh oregano, chopped
- Zest and juice of 1 Lemon
- 1 cup Orzo pasta
- 2 cloves Garlic, minced
- 1 Red onion, finely diced
- 1 Egg
- 1/2 cup Breadcrumbs
- 2 tbsp Olive oil
- Salt & black pepper to taste
- 1/2 cup Feta cheese, crumbled
- 2 cups Chicken broth
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet.
- In a large bowl, mix ground chicken, parsley, oregano, garlic, onion, egg, breadcrumbs, lemon zest, salt, and pepper.
- Roll the mixture into meatballs and place them on the prepared baking sheet. Drizzle lightly with olive oil.
- Bake for 18–22 minutes until golden and cooked through.
- Meanwhile, cook orzo in salted water or chicken broth until tender; drain.
- Toss the cooked orzo with olive oil, lemon juice, chopped parsley, and crumbled feta.
- Serve the meatballs over the lemon orzo and garnish with extra herbs and lemon wedges.
Notes
- For added flavor, consider using homemade breadcrumbs.
- Adjust the amount of lemon juice based on your taste preference.
- These meatballs can be made ahead and frozen for later use.
