Description
Greek Beef Stifado is a comforting slow-braised onion stew featuring fall-apart beef and sweet pearl onions in a deeply spiced tomato-wine sauce.

- 2 lbs Beef chuck
- 1 lb Pearl onions
- 1 can Canned tomatoes
- 1 cup Red wine
- 2 tbsp Olive oil
- 4 Garlic cloves
- 2 tbsp Tomato paste
- 2 Bay leaves
- 1 tsp Dried oregano
- 1 Cinnamon stick
- 4 Whole cloves
- 1 tsp Ground allspice
- 2 tbsp Red wine vinegar
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a heavy pot and brown beef chunks on all sides; remove and set aside.
- In the same pot, sauté garlic briefly, then stir in tomato paste until darkened.
- Deglaze with red wine, scraping up browned bits.
- Add tomatoes, vinegar, bay leaves, cinnamon, cloves, allspice, oregano, salt, and pepper.
- Return beef to the pot, cover, and simmer gently for about 2 hours.
- Add pearl onions and continue cooking until beef is fork-tender and sauce thick.
- Remove whole spices, garnish with parsley, and serve warm.
Notes
- For best results, use a heavy pot to ensure even cooking.
- Allow the stew to sit for a few hours or overnight for flavors to meld.
- Serve with crusty bread or over rice for a complete meal.
