Description

A slow-simmered Greek classic with melt-in-your-mouth beef, sweet pearl onions, and warm aromatic spices.


Ingredients

  • Beef chuck (large chunks)
  • Pearl onions
  • Crushed tomatoes
  • Red wine
  • Olive oil
  • Garlic
  • Tomato paste
  • Red wine vinegar
  • Cinnamon stick
  • Whole cloves
  • Ground allspice
  • Bay leaves
  • Dried oregano
  • Salt & black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a heavy pot and brown beef chunks on all sides; remove and set aside.
  2. In the same pot, sauté garlic briefly, then stir in tomato paste until darkened.
  3. Deglaze with red wine and red wine vinegar, scraping up browned bits.
  4. Add tomatoes, spices, bay leaves, oregano, and return beef to the pot.
  5. Nestle pearl onions into the sauce, cover, and simmer gently for 2–2½ hours.
  6. Stir occasionally until beef is fork-tender and sauce is thick and glossy.
  7. Finish with fresh parsley and adjust seasoning before serving.
