Gooey Hot Cocoa Marshmallow Cookies are soft double-chocolate cookies stuffed with marshmallows and topped with glossy hot-cocoa ganache, making them an irresistible treat.
Ingredients

- 1/2 cup Cocoa powder
- 1 cup Semi-sweet chocolate chips
- 1 cup Marshmallows
- 1/2 cup Butter
- 1 cup Brown sugar
- 1/2 cup Granulated sugar
- 1 Egg
- 1 1/2 cups Flour
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1/2 cup Heavy cream (for ganache)
Instructions
- Cream butter with both sugars until fluffy, then mix in egg.
- Add cocoa, flour, baking soda, and salt; stir in chocolate chips.
- Scoop dough balls, flatten slightly, place 1–2 marshmallows in the center, then wrap dough around to seal.
- Bake 10–12 minutes until puffed and slightly cracked.
- Heat chocolate chips with heavy cream to make a silky ganache.
- Spoon warm ganache over each cookie for that hot-cocoa drip.
- Let set briefly before serving warm and gooey.
Notes
- For best results, use room temperature butter.
- Ensure marshmallows are sealed well within the dough to prevent them from leaking out during baking.
- Cookies are best enjoyed warm and fresh out of the oven.
