Ingredients

- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp baking soda
- 1 tsp vanilla extract
- ½ tsp salt
- 2 cups chocolate chips
- 24 soft caramels (or caramel squares)
Instructions
- Cream butter, brown sugar, and granulated sugar until fluffy; mix in eggs and vanilla.
- Add flour, baking soda, and salt; mix just until combined. Fold in chocolate chips.
- Chill dough 30–45 minutes for better thickness and less spreading.
- Scoop dough balls, flatten slightly, place a caramel in the center, and wrap dough fully around it.
- Arrange on parchment-lined baking sheet with space between cookies.
- Bake at 180°C / 350°F for 10–12 minutes until edges are golden and centers slightly soft.
- Cool 10 minutes so the caramel sets into a gooey molten pocket.
Notes
- Chilling the dough helps prevent the cookies from spreading too much.
- For a richer flavor, use dark chocolate chips.
- Store cookies in an airtight container to maintain softness.
