Description

Soft, thick cookies with molten caramel centers and crispy golden edges.


Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 cups chocolate chips
  • 24 soft caramels (or caramel squares)

Instructions

  1. Cream butter, brown sugar, and granulated sugar until fluffy; mix in eggs and vanilla.
  2. Add flour, baking soda, and salt; mix just until combined. Fold in chocolate chips.
  3. Chill dough 30–45 minutes for better thickness and less spreading.
  4. Scoop dough balls, flatten slightly, place a caramel in the center, and wrap dough fully around it.
  5. Arrange on parchment-lined baking sheet with space between cookies.
  6. Bake at 180°C / 350°F for 10–12 minutes until edges are golden and centers slightly soft.
  7. Cool 10 minutes so the caramel sets into a gooey molten pocket.

Notes

  • Chilling the dough helps prevent the cookies from spreading too much.
  • For a richer flavor, use dark chocolate chips.
  • Store cookies in an airtight container to maintain softness.
