Description

Crispy on the outside, tender inside, finished with a silky herb avocado sauce.


Ingredients

Scale
  • 1 lb fresh salmon, finely chopped
  • 1 ripe avocado
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tbsp mayonnaise
  • 1 garlic clove, minced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt & black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix chopped salmon, breadcrumbs, egg, mayonnaise, garlic, parsley, salt, and pepper until combined.
  3. Roll mixture into evenly sized balls and place on prepared baking sheet.
  4. Lightly brush or spray with olive oil and bake 15–18 minutes until golden and cooked through.
  5. Blend avocado, lemon juice, a pinch of salt, and a splash of water until smooth and creamy.
  6. Drizzle the avocado sauce generously over warm salmon balls and garnish with extra parsley.
