Ingredients

- 1 lb fresh salmon, finely chopped
- 1 ripe avocado
- 1/2 cup breadcrumbs
- 1 egg
- 2 tbsp mayonnaise
- 1 garlic clove, minced
- 2 tbsp chopped fresh parsley
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt & black pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix chopped salmon, breadcrumbs, egg, mayonnaise, garlic, parsley, salt, and pepper until combined.
- Roll mixture into evenly sized balls and place on prepared baking sheet.
- Lightly brush or spray with olive oil and bake 15–18 minutes until golden and cooked through.
- Blend avocado, lemon juice, a pinch of salt, and a splash of water until smooth and creamy.
- Drizzle the avocado sauce generously over warm salmon balls and garnish with extra parsley.
