Description

Juicy, pan-seared chicken meatballs bursting with herbs, nestled over tender buttery orzo.


Ingredients

  • 1 lb ground chicken
  • 1 cup cooked orzo
  • 1 egg
  • ¼ cup grated Parmesan
  • 2 tbsp chopped fresh parsley
  • 1 tbsp fresh dill (optional but recommended)
  • 2 cloves garlic, minced
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp butter (for orzo finish)

Instructions

  1. In a bowl, mix ground chicken, egg, Parmesan, garlic, parsley, dill, onion powder, salt, and pepper until just combined.
  2. Form into evenly sized meatballs (about 1½ inches).
  3. Heat olive oil in a skillet over medium heat. Add meatballs and cook 4–5 minutes per side until golden brown and cooked through.
  4. While cooking, toss warm orzo with butter and a pinch of salt until glossy.
  5. Return all meatballs to the pan for 1–2 minutes to develop extra browning.
  6. Serve meatballs over buttered orzo and sprinkle with extra herbs and Parmesan.
