Ingredients
- Ground beef
- Empanada dough discs
- Curry powder
- Onion

Instructions
- Sauté onion in olive oil until soft; add garlic and cook briefly.
- Brown ground beef, breaking it up until fully cooked.
- Stir in curry powder, cumin, paprika, salt, and pepper.
- Add tomato paste and a splash of beef broth; simmer until thick and fragrant.
- Cool filling slightly, then spoon into empanada discs and seal edges.
- Brush with egg wash and arrange on a baking sheet.
- Bake until puffed and deeply golden; cool slightly before serving.
Notes
- For a vegetarian option, substitute ground beef with lentils or mushrooms.
- Empanadas can be frozen before baking for later use.
