- 2 large chicken breasts, butterflied and pounded thin
- 1 cup fresh spinach leaves
- ½ cup crumbled feta cheese
- ¼ cup chopped sundried tomatoes
- 1 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp crushed red pepper
- Salt and black pepper to taste
- Fresh oregano for garnish
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Season chicken on both sides with olive oil, garlic powder, salt, and pepper.
- Lay spinach, feta, and sundried tomatoes evenly over each flattened chicken breast.
- Roll up tightly and secure with toothpicks, placing seam-side down in the dish.
- Bake for 25–30 minutes until golden and cooked through.
- Remove from oven, rest 5 minutes, and garnish with oregano and crushed red pepper.
- Slice or serve whole with a drizzle of pan juices.
