Description

Juicy chicken rolled with Mediterranean flavors and baked to golden perfection.


Ingredients

  • 2 large chicken breasts, butterflied and pounded thin
  • 1 cup fresh spinach leaves
  • ½ cup crumbled feta cheese
  • ¼ cup chopped sundried tomatoes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp crushed red pepper
  • Salt and black pepper to taste
  • Fresh oregano for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season chicken on both sides with olive oil, garlic powder, salt, and pepper.
  3. Lay spinach, feta, and sundried tomatoes evenly over each flattened chicken breast.
  4. Roll up tightly and secure with toothpicks, placing seam-side down in the dish.
  5. Bake for 25–30 minutes until golden and cooked through.
  6. Remove from oven, rest 5 minutes, and garnish with oregano and crushed red pepper.
  7. Slice or serve whole with a drizzle of pan juices.
