Ingredients

- 2 cups Vegetable broth or water

- Fresh parsley or cilantro (garnish)

Instructions
- Rinse basmati rice until water runs clear; drain well.
- Bloom saffron in warm broth or water and set aside.
- Heat olive oil in a saucepan; gently sauté garlic (and onion if using) until fragrant.
- Stir in rice and toast lightly for 1–2 minutes.
- Pour in saffron liquid and remaining broth; season with salt.
- Bring to a simmer, cover, and cook until rice is tender and liquid absorbed.
- Fluff with a fork, garnish with herbs (and lemon zest if desired), and serve.
Notes
- For a vegan option, use vegan butter or olive oil.
- Adjust the amount of garlic based on your preference.
