Instructions
- Line a muffin tin with cupcake liners.
- Soften vanilla ice cream slightly and fold in rainbow sprinkles until evenly mixed.
- Spoon the mixture into each liner, pressing gently to smooth the tops.
- Melt chocolate chips with coconut oil until glossy and drizzle generously over each cup.
- Freeze for at least 3 hours or until firm.
- Peel off liners before serving.
- Optionally, top with whipped cream or more sprinkles for extra fun.
