Instructions
- Cube the Yukon Gold potatoes, toss with olive oil, salt, and pepper, then roast at 425°F (220°C) until golden and crispy.
- Slowly caramelize onions in a skillet until deep brown and jammy; cool slightly.
- In a bowl, whisk together sour cream, mayonnaise, Dijon mustard, apple cider vinegar, minced garlic, salt, and pepper until smooth.
- Gently fold the warm roasted potatoes into the dressing.
- Add the caramelized onions and crispy bacon bits, mixing carefully to maintain texture.
- Finish with chopped chives and optional cheese while still slightly warm.
- Serve warm or chilled, allowing flavors to meld before serving.
