Ingredients

  • 2 cups caramelized onions

  • 1 cup crispy bacon bits

Instructions

  1. Cube the Yukon Gold potatoes, toss with olive oil, salt, and pepper, then roast at 425°F (220°C) until golden and crispy.
  2. Slowly caramelize onions in a skillet until deep brown and jammy; cool slightly.
  3. In a bowl, whisk together sour cream, mayonnaise, Dijon mustard, apple cider vinegar, minced garlic, salt, and pepper until smooth.
  4. Gently fold the warm roasted potatoes into the dressing.
  5. Add the caramelized onions and crispy bacon bits, mixing carefully to maintain texture.
  6. Finish with chopped chives and optional cheese while still slightly warm.
  7. Serve warm or chilled, allowing flavors to meld before serving.
