Description

A delicious twist on the classic French dip sandwich, these roll-ups feature tender roast beef and melted cheese wrapped in a crispy tortilla.


Ingredients

  • 1 lb shredded roast beef (or leftover pot roast)
  • 6 large flour tortillas
  • 1 ½ cups shredded provolone or mozzarella cheese
  • 1 cup au jus (for dipping)
  • 2 tbsp butter (for brushing)
  • 1 tsp garlic powder
  • 1 tbsp chopped parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Lay out tortillas and sprinkle cheese evenly over each.
  3. Add shredded roast beef down the center, season with salt, pepper, and a pinch of garlic powder.
  4. Roll each tortilla tightly and place seam side down on the baking sheet.
  5. Brush with melted butter and bake for 12–15 minutes, until golden and crisp.
  6. Sprinkle with parsley and serve hot with warm au jus for dipping.
