A delicious twist on the classic French dip sandwich, these roll-ups feature tender roast beef and melted cheese wrapped in a crispy tortilla.

- 1 lb shredded roast beef (or leftover pot roast)
- 6 large flour tortillas
- 1 ½ cups shredded provolone or mozzarella cheese
- 1 cup au jus (for dipping)
- 2 tbsp butter (for brushing)
- 1 tsp garlic powder
- 1 tbsp chopped parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Lay out tortillas and sprinkle cheese evenly over each.
- Add shredded roast beef down the center, season with salt, pepper, and a pinch of garlic powder.
- Roll each tortilla tightly and place seam side down on the baking sheet.
- Brush with melted butter and bake for 12–15 minutes, until golden and crisp.
- Sprinkle with parsley and serve hot with warm au jus for dipping.
