Ingredients

  • 1 lb chicken breast (cut into cubes)
  • 1 tbsp olive oil
  • 4 large flour tortillas
  • ½ cup chipotle ranch dressing
  • ½ cup diced tomatoes
  • ½ cup diced bell peppers
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped cilantro
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss chicken with olive oil, paprika, salt, and pepper; grill or pan-sear until golden and cooked through.
  2. Warm tortillas slightly on a dry skillet.
  3. Layer each tortilla with chicken, diced tomatoes, peppers, cheese, and a drizzle of chipotle ranch.
  4. Roll tightly into burritos, folding sides in first.
