Description
A no-bake fall twist on classic Rice Krispies — shaped like pumpkin pie slices with marshmallow “whipped cream” on top!
Ingredients
- Mini marshmallows (10 cups, divided)
- Crispy rice cereal (6 cups, divided)
- Butter (6 tbsp, divided)
- Orange food coloring (as needed)
- Pumpkin pie spice (1 tsp)
- Vanilla extract (1 tsp)
- White frosting or whipped cream (for topping)
Instructions
- Grease a round pie dish with butter or nonstick spray.
- For the “crust,” melt 3 tbsp butter and 5 cups marshmallows; stir until smooth. Mix in 3 cups cereal, press around the outer edge of the dish.
- For the “filling,” melt remaining butter and marshmallows; stir in pumpkin pie spice, vanilla, orange coloring, and remaining cereal.
- Press the orange mixture inside the “crust” to fill the center evenly.
- Let cool 15–20 minutes before slicing into wedges.
- Pipe a dollop of frosting or whipped topping on each slice to mimic whipped cream.
- Serve and enjoy this playful, chewy pumpkin pie look-alike!
