Description

A no-bake fall twist on classic Rice Krispies — shaped like pumpkin pie slices with marshmallow “whipped cream” on top!


Ingredients

  • Mini marshmallows (10 cups, divided)
  • Crispy rice cereal (6 cups, divided)
  • Butter (6 tbsp, divided)
  • Orange food coloring (as needed)
  • Pumpkin pie spice (1 tsp)
  • Vanilla extract (1 tsp)
  • White frosting or whipped cream (for topping)

Instructions

  1. Grease a round pie dish with butter or nonstick spray.
  2. For the “crust,” melt 3 tbsp butter and 5 cups marshmallows; stir until smooth. Mix in 3 cups cereal, press around the outer edge of the dish.
  3. For the “filling,” melt remaining butter and marshmallows; stir in pumpkin pie spice, vanilla, orange coloring, and remaining cereal.
  4. Press the orange mixture inside the “crust” to fill the center evenly.
  5. Let cool 15–20 minutes before slicing into wedges.
  6. Pipe a dollop of frosting or whipped topping on each slice to mimic whipped cream.
  7. Serve and enjoy this playful, chewy pumpkin pie look-alike!
