Description

Moist, deeply spiced coffee cake packed with sweet dates, crunchy walnuts, and finished with bold espresso glaze.


Ingredients

  • 1 cup chopped dates
  • 1 cup walnuts, chopped
  • 1 cup brewed coffee or espresso
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup Greek yogurt or sour cream
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for icing)
  • 2 tbsp espresso powder
  • 24 tbsp milk or cream

Instructions

  1. Soak chopped dates in hot brewed coffee until soft; let cool.
  2. Cream butter and brown sugar until light and fluffy, then beat in eggs and vanilla.
  3. Mix in yogurt, then fold in soaked dates and chopped walnuts.
  4. Whisk dry ingredients and gently fold into batter until just combined.
  5. Pour into a lined loaf pan and smooth the top.
  6. Bake until a toothpick comes out mostly clean and the loaf is deeply golden.
  7. Whisk powdered sugar, espresso powder, and milk into a thick glaze and drizzle over cooled cake.
