- 1 cup chopped dates
- 1 cup walnuts, chopped
- 1 cup brewed coffee or espresso
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1/2 cup Greek yogurt or sour cream
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 cup powdered sugar (for icing)
- 2 tbsp espresso powder
- 2–4 tbsp milk or cream
Instructions
- Soak chopped dates in hot brewed coffee until soft; let cool.
- Cream butter and brown sugar until light and fluffy, then beat in eggs and vanilla.
- Mix in yogurt, then fold in soaked dates and chopped walnuts.
- Whisk dry ingredients and gently fold into batter until just combined.
- Pour into a lined loaf pan and smooth the top.
- Bake until a toothpick comes out mostly clean and the loaf is deeply golden.
- Whisk powdered sugar, espresso powder, and milk into a thick glaze and drizzle over cooled cake.

- Ensure dates are well-soaked for better texture.
- Adjust the amount of espresso powder in the glaze to taste.
- Store leftovers in an airtight container for up to 3 days.
