Ingredients
- Boneless chicken breasts or thighs
- Fresh ginger (grated)
- Coconut milk
- Chicken broth
- Garlic
- Onion
- Red bell pepper
- Mushrooms
- Red curry paste
- Fish sauce
- Soy sauce
- Brown sugar or honey
- Lime juice
- Chili flakes or fresh chili
- Baby spinach or kale
- Fresh cilantro
- Salt & black pepper
Instructions
- Add chicken, broth, coconut milk, ginger, garlic, onion, bell pepper, and mushrooms to the crock pot.
- Stir in red curry paste, fish sauce, soy sauce, and brown sugar.
- Cover and cook on low for 4–6 hours until chicken is tender.
- Remove chicken, shred, and return it to the soup.
- Stir in spinach or kale and let wilt.
- Finish with lime juice and adjust seasoning.
- Serve hot, topped with cilantro and extra chili if desired.
Notes
- For a spicier soup, add more chili flakes or fresh chili.
- Can substitute chicken with tofu for a vegetarian option.
- Adjust the consistency by adding more broth if desired.
