Description

Ingredients

  • Boneless chicken breasts or thighs
  • Fresh ginger (grated)
  • Coconut milk
  • Chicken broth
  • Garlic
  • Onion
  • Red bell pepper
  • Mushrooms
  • Red curry paste
  • Fish sauce
  • Soy sauce
  • Brown sugar or honey
  • Lime juice
  • Chili flakes or fresh chili
  • Baby spinach or kale
  • Fresh cilantro
  • Salt & black pepper

Instructions

  1. Add chicken, broth, coconut milk, ginger, garlic, onion, bell pepper, and mushrooms to the crock pot.
  2. Stir in red curry paste, fish sauce, soy sauce, and brown sugar.
  3. Cover and cook on low for 4–6 hours until chicken is tender.
  4. Remove chicken, shred, and return it to the soup.
  5. Stir in spinach or kale and let wilt.
  6. Finish with lime juice and adjust seasoning.
  7. Serve hot, topped with cilantro and extra chili if desired.

Notes

  • For a spicier soup, add more chili flakes or fresh chili.
  • Can substitute chicken with tofu for a vegetarian option.
