- 4 Russet potatoes
- 3 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1 cup Parmesan cheese, grated
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Paprika (optional)
- 1 teaspoon Dried oregano or Italian seasoning
- Fresh parsley, finely chopped, for garnish
Instructions
- Cut potatoes into even fries and soak in cold water for 30 minutes; drain and pat very dry.
- Toss fries with olive oil, salt, pepper, and paprika.
- Spread in a single layer on a hot baking sheet.
- Bake for 25 minutes, flip, then bake another 15–20 minutes until deeply golden and crisp.
- Heat olive oil or butter with minced garlic just until fragrant.
- Toss hot fries with garlic oil and grated Parmesan.
- Finish with parsley and extra Parmesan; serve immediately.
