Ingredients

  • 4 Russet potatoes
  • 3 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Parmesan cheese, grated
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Paprika (optional)
  • 1 teaspoon Dried oregano or Italian seasoning
  • Fresh parsley, finely chopped, for garnish

Instructions

  1. Cut potatoes into even fries and soak in cold water for 30 minutes; drain and pat very dry.
  2. Toss fries with olive oil, salt, pepper, and paprika.
  3. Spread in a single layer on a hot baking sheet.
  4. Bake for 25 minutes, flip, then bake another 15–20 minutes until deeply golden and crisp.
  5. Heat olive oil or butter with minced garlic just until fragrant.
  6. Toss hot fries with garlic oil and grated Parmesan.
  7. Finish with parsley and extra Parmesan; serve immediately.
