Ingredients

  • Sliced beef (roast beef or shaved steak)
  • Swiss or provolone cheese
  • Thick-cut bread (sourdough preferred)
  • Butter
  • Yellow onions
  • Beef broth
  • Garlic
  • Fresh thyme (optional)
  • Black pepper

Instructions

  1. Slowly sauté sliced onions in butter over medium-low heat until deeply caramelized; set aside.
  2. Warm beef gently in a small pan with a splash of beef broth and a pinch of pepper.
  3. Butter one side of each bread slice.
  4. On the unbuttered side, layer cheese, warm beef, caramelized onions, then more cheese.
  5. Top with another slice of bread, buttered side out.
  6. Grill in a skillet over medium heat until bread is golden and cheese is fully melted.
  7. Slice and serve hot (optional side of warm broth for dipping).
