Description

Crispy Cilantro Lime Chicken Sandwiches are crunchy, zesty, and juicy, bringing bold citrus flavor in every bite.


Ingredients

  • 4 Chicken breasts
  • 2 cups Cornflakes (crushed)
  • 1/4 cup Fresh lime juice
  • 1/4 cup Fresh cilantro (chopped)
  • 2 Eggs
  • 1 cup All-purpose flour
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • Salt & black pepper to taste
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour cream or Greek yogurt
  • 1 tbsp Honey
  • 1 Cucumber (thinly sliced)
  • 1 Jalapeño (sliced)
  • 4 Sandwich buns
  • Olive oil spray

Instructions

  1. Pound chicken breasts to even thickness and season with salt, pepper, garlic powder, and paprika.
  2. Set up dredging stations: flour, beaten eggs, and crushed cornflakes.
  3. Coat chicken in flour, dip in egg, then press firmly into cornflakes.
  4. Air fry or bake until golden brown and fully cooked, flipping once.
  5. Stir mayo, sour cream, lime juice, zest, chopped cilantro, and honey to make the sauce.
  6. Toss cucumber and jalapeño lightly with a spoon of sauce.
  7. Assemble sandwiches with crispy chicken, slaw, and extra sauce on toasted buns.

Notes

  • For extra crunch, ensure the cornflakes are finely crushed.
  • Adjust the spice level by adding more or less jalapeño.
