- 4 Chicken breasts
- 2 cups Cornflakes (crushed)
- 1/4 cup Fresh lime juice
- 1/4 cup Fresh cilantro (chopped)
- 2 Eggs
- 1 cup All-purpose flour
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- Salt & black pepper to taste
- 1/2 cup Mayonnaise
- 1/2 cup Sour cream or Greek yogurt
- 1 tbsp Honey
- 1 Cucumber (thinly sliced)
- 1 Jalapeño (sliced)
- 4 Sandwich buns
- Olive oil spray
Instructions
- Pound chicken breasts to even thickness and season with salt, pepper, garlic powder, and paprika.
- Set up dredging stations: flour, beaten eggs, and crushed cornflakes.
- Coat chicken in flour, dip in egg, then press firmly into cornflakes.
- Air fry or bake until golden brown and fully cooked, flipping once.
- Stir mayo, sour cream, lime juice, zest, chopped cilantro, and honey to make the sauce.
- Toss cucumber and jalapeño lightly with a spoon of sauce.
- Assemble sandwiches with crispy chicken, slaw, and extra sauce on toasted buns.
Notes
- For extra crunch, ensure the cornflakes are finely crushed.
- Adjust the spice level by adding more or less jalapeño.
- Can substitute Greek yogurt for sour cream for a healthier option.
