Ingredients

  • 2 cups shredded cooked chicken
  • 1012 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet salsa or taco seasoning
  • Oil for frying (or spray for baking)
  • Sour cream
  • Shredded lettuce
  • Diced tomato
  • Chopped cilantro
  • Lime wedges

Instructions

  1. Mix shredded chicken with cheese and seasoning (or salsa) to make a flavorful filling.
  2. Warm tortillas until soft and pliable so they don’t crack.
  3. Add a small line of filling to each tortilla and roll tightly.
  4. Fry seam-side down in hot oil until crisp and golden (or bake at 425°F for 15–18 minutes).
  5. Drain on paper towels to keep them crunchy.
  6. Plate and top with shredded lettuce, diced tomatoes, sour cream, and cilantro.
  7. Serve with lime wedges and enjoy while hot and crispy.
