- 1 cup panko breadcrumbs
- 8 oz cremini mushrooms (sliced)

- 1/2 cup flour
- 2 eggs (beaten)
- 3 tbsp butter
- 2 tbsp olive oil
- 1/2 cup heavy cream
- Salt, pepper, and parsley for garnish
Instructions
- Dredge chicken in flour, dip in beaten eggs, then coat with panko breadcrumbs.
- Heat olive oil and 1 tbsp butter in a skillet; fry chicken until golden and crispy on both sides. Set aside.
- In the same skillet, add remaining butter and mushrooms; sauté until browned.
- Sprinkle a bit of flour, stir, and slowly add chicken broth to create a smooth sauce.
- Stir in heavy cream, season with salt and pepper, and simmer until thickened.
- Pour the mushroom gravy over the crispy chicken cutlets.
- Garnish with chopped parsley and serve hot.
