Description

Golden, crunchy chicken topped with a rich, velvety mushroom gravy — pure comfort on a plate.


Ingredients

  • 4 boneless chicken breasts (pounded thin)
  • 1 cup panko breadcrumbs
  • 8 oz cremini mushrooms (sliced)
  • 1 cup chicken broth
  • 1/2 cup flour
  • 2 eggs (beaten)
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • Salt, pepper, and parsley for garnish

Instructions

  1. Dredge chicken in flour, dip in beaten eggs, then coat with panko breadcrumbs.
  2. Heat olive oil and 1 tbsp butter in a skillet; fry chicken until golden and crispy on both sides. Set aside.
  3. In the same skillet, add remaining butter and mushrooms; sauté until browned.
  4. Sprinkle a bit of flour, stir, and slowly add chicken broth to create a smooth sauce.
  5. Stir in heavy cream, season with salt and pepper, and simmer until thickened.
  6. Pour the mushroom gravy over the crispy chicken cutlets.
  7. Garnish with chopped parsley and serve hot.
