Description

Ingredients

  • Mashed potatoes (thick, cooled)
  • Mozzarella cubes (for stuffing)
  • Eggs
  • Breadcrumbs
  • Parmesan cheese
  • Garlic powder
  • Salt & pepper
  • Parsley
  • Optional: paprika or Italian seasoning

Instructions

  1. Mix mashed potatoes with Parmesan, garlic powder, salt, pepper, and parsley.
  2. Scoop a portion of potato mix, flatten in your palm, and place a mozzarella cube in the center.
  3. Roll into a tight ball, ensuring the cheese is completely sealed.
  4. Dip each ball in beaten egg, then roll in breadcrumbs until fully coated.
  5. Either bake at 375°F for 15–18 minutes (spray with oil) or fry at 350°F until golden and crisp.
  6. Drain on paper towels to keep crunchy.
  7. Serve warm with marinara, ranch, or spicy mayo.
