Ingredients
- Boneless chicken breast (or thighs)
- White beans (cannellini or great northern)
- Green chiles
- Chicken broth
- Onion (diced)
- Garlic (minced)
- Ground cumin
- Oregano
- Heavy cream or cream cheese
- Olive oil
- Salt & black pepper
- Fresh cilantro
- Optional toppings: shredded cheese, avocado, lime
Instructions
- Heat olive oil in a pot over medium heat; sauté onion until soft.
- Add garlic, cumin, and oregano; cook until fragrant.
- Add chicken, broth, green chiles, and beans; simmer until chicken is tender.
- Remove chicken, shred, and return to the pot.
- Stir in cream or cream cheese until silky and smooth.
- Simmer gently to thicken and adjust seasoning.
- Serve hot with fresh cilantro and favorite toppings.
Notes
- For a spicier chili, add more green chiles or a pinch of cayenne pepper.
