Ingredients

  • Boneless chicken breast (or thighs)
  • White beans (cannellini or great northern)
  • Green chiles
  • Chicken broth
  • Onion (diced)
  • Garlic (minced)
  • Ground cumin
  • Oregano
  • Heavy cream or cream cheese
  • Olive oil
  • Salt & black pepper
  • Fresh cilantro
  • Optional toppings: shredded cheese, avocado, lime

Instructions

  1. Heat olive oil in a pot over medium heat; sauté onion until soft.
  2. Add garlic, cumin, and oregano; cook until fragrant.
  3. Add chicken, broth, green chiles, and beans; simmer until chicken is tender.
  4. Remove chicken, shred, and return to the pot.
  5. Stir in cream or cream cheese until silky and smooth.
  6. Simmer gently to thicken and adjust seasoning.
  7. Serve hot with fresh cilantro and favorite toppings.
