Description

Juicy medium-rare steak slices over creamy mushroom pasta—rich, hearty, and cold-weather perfect.


Ingredients

  • Ribeye or strip steak
  • Rigatoni pasta
  • Cremini mushrooms
  • Heavy cream
  • Garlic
  • Shallot or onion
  • Butter
  • Olive oil
  • Parmesan cheese
  • Fresh parsley
  • Salt & black pepper
  • Optional: splash of white wine

Instructions

  1. Season steak generously with salt and pepper; sear in a hot skillet with olive oil 3–4 minutes per side for medium-rare. Rest.
  2. Cook rigatoni in salted water until al dente; reserve ½ cup pasta water.
  3. In the same skillet, sauté mushrooms in butter until golden; add shallot and garlic.
  4. Deglaze with a splash of wine (optional), then stir in cream and simmer until slightly thickened.
  5. Add Parmesan and a splash of pasta water; toss in drained pasta until coated and glossy.
  6. Slice rested steak and place over creamy pasta; garnish with parsley and cracked pepper.

  • For best results, use a meat thermometer to check steak doneness.
  • Feel free to substitute other types of mushrooms if desired.
