Juicy medium-rare steak slices over creamy mushroom pasta—rich, hearty, and cold-weather perfect.
Ingredients
- Ribeye or strip steak
- Rigatoni pasta
- Cremini mushrooms
- Heavy cream
- Garlic
- Shallot or onion
- Butter
- Olive oil
- Parmesan cheese
- Fresh parsley
- Salt & black pepper
- Optional: splash of white wine
Instructions
- Season steak generously with salt and pepper; sear in a hot skillet with olive oil 3–4 minutes per side for medium-rare. Rest.
- Cook rigatoni in salted water until al dente; reserve ½ cup pasta water.
- In the same skillet, sauté mushrooms in butter until golden; add shallot and garlic.
- Deglaze with a splash of wine (optional), then stir in cream and simmer until slightly thickened.
- Add Parmesan and a splash of pasta water; toss in drained pasta until coated and glossy.
- Slice rested steak and place over creamy pasta; garnish with parsley and cracked pepper.
Notes
- For best results, use a meat thermometer to check steak doneness.
- Feel free to substitute other types of mushrooms if desired.
