Ingredients

  • Potato gnocchi
  • Mushrooms (cremini or button)
  • Heavy cream
  • Fresh spinach
  • Olive oil or butter
  • Garlic (minced)
  • Vegetable broth
  • Parmesan cheese (grated)
  • Salt
  • Black pepper
  • Red pepper flakes (optional)

Instructions

  1. Boil gnocchi according to package directions; drain and set aside.
  2. Heat olive oil or butter in a large skillet over medium heat.
  3. Sauté mushrooms until golden and tender.
  4. Add garlic and cook briefly until fragrant.
  5. Pour in cream and a splash of broth; simmer until slightly thickened.
  6. Stir in spinach until just wilted, then fold in gnocchi.
