Ingredients

  • 2 cups Kale or green cabbage
  • 2 tablespoons Butter
  • 1 cup Heavy cream or milk
  • 2 tablespoons Olive oil or additional butter
  • 1 Yellow onion or leeks
  • 2 cloves Garlic
  • 4 cups Vegetable or chicken broth
  • Salt to taste
  • Black pepper to taste
  • Green onions (for garnish)

Instructions

  1. Heat olive oil or butter in a pot; sauté chopped onion or leeks until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Stir in diced potatoes and broth; bring to a simmer until potatoes are tender.
  4. Add chopped kale or cabbage and cook until wilted.
  5. Lightly mash some of the potatoes for thickness.
  6. Stir in butter and cream until silky and smooth.
  7. Season well and finish with sliced green onions.
