Ingredients

- 4–6 Potatoes
- 2 cups Kale or green cabbage
- 2 tablespoons Butter
- 1 cup Heavy cream or milk
- 2 tablespoons Olive oil or additional butter
- 1 Yellow onion or leeks
- 2 cloves Garlic
- 4 cups Vegetable or chicken broth
- Salt to taste
- Black pepper to taste
- Green onions (for garnish)
Instructions
- Heat olive oil or butter in a pot; sauté chopped onion or leeks until soft.
- Add garlic and cook briefly until fragrant.
- Stir in diced potatoes and broth; bring to a simmer until potatoes are tender.
- Add chopped kale or cabbage and cook until wilted.
- Lightly mash some of the potatoes for thickness.
- Stir in butter and cream until silky and smooth.
- Season well and finish with sliced green onions.
Notes
- For a vegan version, substitute butter and cream with plant-based alternatives.
- Adjust the thickness of the soup by mashing more or fewer potatoes.
