Instructions
- Heat olive oil in a wide skillet over medium heat; season chicken with salt and pepper.
- Sear chicken on both sides until golden; remove and set aside.
- Add halved baby potatoes to the skillet; cook until lightly browned.
- Stir in butter and garlic; cook until fragrant.
- Pour in chicken broth, Dijon mustard, cream, and Italian seasoning; simmer gently.
- Return chicken to the skillet and simmer until cooked through and sauce thickens.
- Spoon sauce over chicken and potatoes; adjust seasoning and serve.
