A rich, tangy twist on classic macaroni salad inspired by deviled eggs.
Ingredients

- 2 cups elbow macaroni
- 4 hard-boiled eggs
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup sweet pickle relish
- 1 teaspoon paprika
- Salt & black pepper to taste
- 1/2 cup celery (finely diced)
- 1/4 cup red onion (minced)
- 2 tablespoons fresh parsley (chopped)
Instructions
- Cook macaroni in salted water until al dente. Drain and cool completely.
- Peel and finely chop hard-boiled eggs.
- In a large bowl, whisk mayonnaise, Dijon mustard, vinegar, relish, salt, and pepper until creamy.
- Fold in cooled macaroni, chopped eggs, celery, and red onion.
- Stir gently until everything is evenly coated and creamy.
- Sprinkle generously with paprika and fresh parsley.
- Chill at least 1 hour before serving for best flavor.
Notes
- For a spicier kick, add a dash of hot sauce to the dressing.
- Can be made a day in advance for enhanced flavor.
