Description

Ingredients

  • 10 Garlic cloves
  • 1 cup Vegetable oil
  • 1/4 cup Fresh lemon juice
  • 1/4 cup Ice water
  • 1 tsp Kosher salt

Instructions

  1. Peel garlic cloves and remove the green germ if present for a smoother taste.
  2. Add garlic and salt to a food processor; blend until finely minced and creamy.
  3. With the processor running, slowly drizzle in vegetable oil in a very thin stream, allowing it to emulsify.
  4. Alternate adding oil and a little ice water to keep the mixture light and stable.
  5. Add lemon juice gradually, continuing to blend until thick, white, and fluffy.
  6. Taste and adjust salt or lemon if needed.
  7. Chill briefly before serving for best texture.
