- 10 Garlic cloves
- 1 cup Vegetable oil
- 1/4 cup Fresh lemon juice
- 1/4 cup Ice water
- 1 tsp Kosher salt
Instructions
- Peel garlic cloves and remove the green germ if present for a smoother taste.
- Add garlic and salt to a food processor; blend until finely minced and creamy.
- With the processor running, slowly drizzle in vegetable oil in a very thin stream, allowing it to emulsify.
- Alternate adding oil and a little ice water to keep the mixture light and stable.
- Add lemon juice gradually, continuing to blend until thick, white, and fluffy.
- Taste and adjust salt or lemon if needed.
- Chill briefly before serving for best texture.
