Instructions
- Heat olive oil or butter in a large pot; sauté onion, carrots, and celery until soft.
- Add garlic and Italian seasoning; cook until fragrant.
- Pour in chicken broth and bring to a gentle simmer.
- Add gnocchi and cook according to package directions (about 3–4 minutes).
- Stir in chicken and spinach.
- Pour in cream and simmer gently until soup thickens slightly.
- Season to taste and serve hot with Parmesan if desired.
