- 1 lb Chicken breast (or rotisserie chicken)
- 1 cup Orzo pasta
- 2 cups Broccoli florets
- 2 cups Fresh spinach
- 2 tbsp Olive oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 Carrots, chopped
- 4 cups Chicken broth
- 1 tsp Italian seasoning
- Salt & black pepper to taste
- 1 tbsp Lemon juice (optional, for brightness)
- Fresh parsley (optional garnish)
Instructions
- Heat olive oil in a pot and sauté onion and carrots until softened.
- Add garlic and Italian seasoning; stir until fragrant.
- Pour in chicken broth and bring to a gentle boil.
- Add orzo and simmer 7–8 minutes until nearly tender.
- Stir in broccoli and chicken; cook 4–5 minutes.
- Add spinach and cook just until wilted.
- Season to taste, add a squeeze of lemon if desired, and serve hot.
Notes
- This soup can be made with leftover rotisserie chicken for added convenience.
- Feel free to add other vegetables like peas or zucchini for extra nutrition.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
