Ingredients
- Steak (sirloin or ribeye)
- Linguine pasta
- Butter
- Carrots
- Olive oil
- Garlic, minced
- Dijon mustard
- Lemon juice
- Red pepper flakes
- Fresh parsley, chopped
- Salt & black pepper
- Reserved pasta water
Instructions
- Toss carrots with olive oil, salt, and pepper; roast 25–30 minutes until caramelized.
- Season steak generously and sear in a hot pan to desired doneness; rest, then slice.
- Cook linguine until al dente; reserve some pasta water.
- Melt butter in a pan, add garlic, Dijon, lemon juice, and red pepper flakes.
- Toss linguine in the cowboy butter sauce, loosening with pasta water as needed.
- Fold in roasted carrots and sliced steak.
- Finish with parsley, cracked pepper, and serve hot.
Notes
- For a spicier kick, increase the amount of red pepper flakes.
- Make sure to rest the steak after cooking for better juiciness.
