Ingredients

  • 1 cup Rolled oats
  • 1 cup Full-fat coconut milk
  • 1/2 cup Coconut cream
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Chia seeds (optional, for thickness)
  • Pinch of salt
  • 1/4 cup Toasted coconut flakes
  • Optional: protein powder or Greek-style plant yogurt

Instructions

  1. In a bowl or jar, combine rolled oats, coconut milk, and coconut cream.
  2. Stir in maple syrup, vanilla extract, and a pinch of salt.
  3. Add chia seeds if using and mix until fully combined.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Stir well before serving, adding a splash of coconut milk if needed.
  6. Spoon into bowls and top with toasted coconut flakes.

Notes

  • For a thicker consistency, add more chia seeds.
  • Can be made vegan by using plant-based yogurt.
