Description

Ingredients

Scale
  • 2 lbs Beef chuck
  • 750 ml Red wine
  • 3 Carrots
  • 1 cup Pearl or yellow onions
  • 8 oz Mushrooms
  • 4 cloves Garlic
  • 2 tbsp Tomato paste
  • 2 cups Beef broth
  • 2 tbsp Olive oil
  • 1 tsp Fresh thyme
  • 1 Bay leaf
  • Salt & black pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Season beef generously and sear until deeply browned; set aside.
  2. Sauté onions and carrots in the same pot until caramelized.
  3. Stir in garlic and tomato paste; cook until fragrant and darkened.
  4. Deglaze with red wine, scraping up browned bits.
  5. Add beef back with broth, thyme, and bay leaf.
  6. Cover and braise until beef is fork-tender and sauce thickens.
  7. Serve over mashed potatoes or noodles, finished with fresh parsley.

Notes

  • For best results, use a good quality red wine.
  • Let the stew sit for a few hours or overnight for enhanced flavors.
  • Can be served with crusty bread for dipping.
