- 2 lbs Beef chuck
- 750 ml Red wine
- 3 Carrots
- 1 cup Pearl or yellow onions
- 8 oz Mushrooms
- 4 cloves Garlic
- 2 tbsp Tomato paste
- 2 cups Beef broth
- 2 tbsp Olive oil
- 1 tsp Fresh thyme
- 1 Bay leaf
- Salt & black pepper to taste
- Fresh parsley (for garnish)
Instructions
- Season beef generously and sear until deeply browned; set aside.
- Sauté onions and carrots in the same pot until caramelized.
- Stir in garlic and tomato paste; cook until fragrant and darkened.
- Deglaze with red wine, scraping up browned bits.
- Add beef back with broth, thyme, and bay leaf.
- Cover and braise until beef is fork-tender and sauce thickens.
- Serve over mashed potatoes or noodles, finished with fresh parsley.
Notes
- For best results, use a good quality red wine.
- Let the stew sit for a few hours or overnight for enhanced flavors.
- Can be served with crusty bread for dipping.
