Ingredients

- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/3 cup pine nuts
- 1/2 cup extra-virgin olive oil
- 2 cloves garlic
- Juice of 1/2 lemon
- Salt & black pepper to taste
Instructions
- Add basil, pine nuts, and garlic to a food processor; pulse until finely chopped.
- Add Parmesan and pulse again to combine.
- With the processor running, slowly stream in olive oil until smooth and creamy.
- Add lemon juice, salt, and pepper; pulse once more.
- Taste and adjust seasoning or consistency with extra oil if needed.
- Store in a sealed jar in the fridge for up to 5 days.
Notes
- For a nuttier flavor, toast the pine nuts before adding them to the food processor.
- Adjust the amount of garlic according to your taste preference.
- This pesto can be used in pasta, sandwiches, or as a dip.
