Description
A vibrant, ultra-festive red velvet poke cake filled with creamy pudding layers and topped with whipped holiday magic.
Ingredients
Scale
- 1 box red velvet cake mix
- 1 box instant vanilla pudding mix
- 2 cups milk (for pudding)
- 1 tub whipped topping
- Green food coloring
- 1 can sweetened condensed milk (for “poke” filling)
- Holiday sprinkles (red/green)
- Powdered sugar (optional dusting)
- 1 tsp vanilla extract
Instructions
- Bake red velvet cake according to box instructions; let cool for 10 minutes.
- Use the end of a wooden spoon to poke holes all over the warm cake.
- Pour sweetened condensed milk evenly into the holes so it soaks in.
- Whisk pudding mix with cold milk, divide in half; tint one half bright green.
- Spread the yellow layer first, then the green layer on top; chill for 1 hour.
- Finish with whipped topping, holiday sprinkles, and a dusting of powdered sugar.
- Slice into colorful squares and serve chilled.
Notes
- Ensure the cake is completely cooled before poking holes.
- Chilling the cake helps the flavors meld together.
- Feel free to customize the sprinkles for different holidays.
