Instructions

  1. Make custard: Heat milk with vanilla; whisk yolks, sugar, and cornstarch, then temper and cook until thick. Chill completely.
  2. Mix dough: Combine flour, sugar, yeast, and salt; mix in eggs and warm milk until a shaggy dough forms.
  3. Knead + butter: Knead until elastic, then add soft butter gradually until glossy and stretchy (windowpane).
  4. First rise: Cover and let rise until doubled (or chill overnight for deeper flavor).
  5. Shape + fill: Portion dough, flatten, pipe in chilled custard, sprinkle in mini chips, pinch seam tight, place seam-side down.
  6. Proof + top: Proof until puffy; brush with egg wash and sprinkle extra mini chips on top.
  7. Bake: Bake until deep golden and glossy; cool slightly so custard sets before tearing in.
