Mini meatloaf pockets bursting with gooey melted cheese in every bite.
Ingredients

- 1 lb Ground beef
- 1 cup Shredded cheddar cheese
- 12 Mozzarella cubes (for stuffing)
- 1 cup Breadcrumbs
- 1 Egg
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 tbsp Worcestershire sauce
- Ketchup or BBQ sauce (for topping)
- Parsley (for garnish)
Instructions
- In a bowl, mix ground beef, breadcrumbs, egg, onion, garlic, cheddar, Worcestershire, salt, and pepper.
- Scoop a portion of meat mixture into your hand, press a mozzarella cube into the center, and seal tightly.
- Place each meatloaf bite in a greased muffin tin.
- Brush the tops lightly with ketchup or BBQ sauce.
- Bake at 375°F (190°C) for 20–25 minutes until browned and bubbly.
- Add extra cheese on top and bake 5 more minutes to melt.
- Garnish with chopped parsley before serving.
